September 2 2012: Cooking Fresh Fruit and Being a Tourist and a Walk in the Dark

Our friend Kimberly has been sharing maters, peaches, plums and nectarines with us from local farmers. I had to find something to do with them. So here it is. I found the over ripe tomato recipe online at Figs & Wigs … The other fruits I just made something up from looking at other recipes. All will go in the freezer for later use!

This turned out sooooo Good!! Yummilicious! Can’t wait to use it with pasta or picante sauce or just spreading on some yummy bread. Got enough tomatoes to make one more batch.

After all that cooking it was time for a little adventure!!

Team TLC headed to the Galena Creek Visitor’s Center. They’ve got some pretty cool stuff in the center to look at and explore and then there’s a .4 mile trail that’s just beautiful! Here’s the Team being silly in the Center.

After exploring the Center we walked the .4 trail. It’s just so beautiful … Makes it even better when you are walking it with beautiful people! 🙂

I’ve gotten into the habit of always looking for a heart shaped rock wherever we go … FOUND ONE!! I usually leave them because they are buried pretty good. This one came home with us since it was sitting right on top of the dirt!

We ended our little pretending to be tourist adventures with going to the Beach … Yogurt Beach, that is, for some yummy goodness! Lillian enjoyed a sucker as she doesn’t like ice cream or frozen yogurt! Thomas had root beer float flavor and told me root beer floats make cowboys crazy! Um, okay Mr. T!!

If you read through previous posts you will see that I am all about inexpensive and usually outdoor fun for us. I always ask for the small cups at Yogurt Beach which they don’t have out. You have to ask for them. I use their stamp cards too as I often use this as a little treat for Thomas. We had a free one coming. Thomas and I both got frozen yogurt this time and it only costs 51 cents! WOW!! Now, that WAS a treat!

We had a special dinner with what I had been working on all morning! It was one of the best dinners I’ve had in a long time made by my own hands …. YUM!!! Chicken with the fresh peaches I cooked earlier today and yummy toasted bread with the fresh maters I cooked earlier today …. Did I say YUM?? My tummy was so darn happy!

Then the Team went on for a stroll on the trail in the dark!  One of the best walks we’ve ever had!!! Nothin like walking in the dark with your kids, looking at stars, listening to crickets and just being together …. ♥ ♥ ♥
