Veggie Potato Noodle soup made for dinner last night. My take on chicken noodle soup.
I agree. I was having the same problem. Delicious!
It’s a mixture of two recipes, plus what I had in the fridge.
Here are the two I mixed together. I added potatoes, eggplant, yellow squash, corn, carrots, peppers, noodles, and chard.

Who likes stuffed peppers? It’s pretty much unlimited with different variations. 😋😋😋
