Because I Like It and I Can

**THROWBACK POST**

January 28 2016:

Going for a walk and hanging out in trees. Thomas and I had a wonderful walk this afternoon.

Thomas’ friend told him that he should live in a mansion when he earns a million dollars. Thomas told him he’d be living in a tiny place just like where we live now. “Why?”, his friend asked. Thomas answered, “Because I like it and I can.” Love, sweet love. xoxo

Lillian and Camilla January 2017 Date Day, yesterday, Part 2:

Wasn’t in a position to go out for a dessert this time ….. so improvising to the rescue! Used what we had and made a special Date Day dessert ….

Trader Joe’s peppermint Joe Joes dipped in melted dark chocolate, topped with gluten free jelly beans. Adding the last step of a few minutes in the fridge to harden the chocolate.

Next, meeting and discussing which book to create for Lillian’s first published book! Here’s to us, here’s to love, and here’s to 15 years of Date days!!

I Would Live There Forever

January 17 2017:

“If we had a house made out of chocolate and potato medallions, I’d live there forever.” ~Thomas Darnell ….

They kind of like the new way I’ve been cooking potatoes; slicing similar to scalloped potatoes, tossing in olive oil, sea salt or pink salt, ground ginger, and fresh rosemary and baking in the oven.

I agree with Thomas. It was such a satisfying dinner tonight. I felt so deeply grateful with a happy tummy. I had curry soup made with potatoes, carrots, and butternut squash with a side salad of cucumber, beets, black olives, onions, pickles, and nutritional yeast topped with a fig balsamic AND some of those yummy potato medallions too!!

Inspired Chain Reaction of Good

**THROWBACK POST**

January 23 2016:

“When you inspire someone, it creates a chain reaction.” –Thomas ….

He watched a BrainPop clip this morning about Cesar Chavez in which Chavez says he was inspired by Gandhi. Thomas says, “Gandhi inspired so many people. I wonder who inspired him?”

May you have a wonderful day creating your own chain reactions sparked by inspiration. Love, sweet love … xoxo

Just love the smell of fresh sliced cucumber. So refreshing! xoxo

Cucumber 1.9.17

January 11 2017:

Made these for myself thinking Thomas and Lillian wouldn’t want them. Should have made more!

Baked russet potato medallions with olive oil, pink Himalayan salt, black pepper, and ground ginger. Yum!!!!

I have an electric oven and baked them at 425. I started checking them after 15 minutes and every 5 minutes after that, rotating the pan each time. The first time I made them it only took 20 minutes. Next time it took about 30. Must have sliced them thicker as I just eyeball the slicing.

Letting Go Burning Ceremony

“People have a hard time letting go of their suffering. Out of a fear of the unknown, they prefer suffering that is familiar.” ~Thich Nhat Hanh

.. from the blog … “We wrote stories, beliefs, habits, and fears on strips of paper. It was such a wonderful, blissful feeling sitting with both of them doing this. They really, truly understood the process and what types of things to write on the strips. I was so moved. There was a beautiful excitement in the air. A magical anticipation of ….”
