Vegan Eats: Delicious Soup and Stuffed Peppers

This was so good. Thomas asked me to hurry up and put it away because he couldn’t stop eating it. 😋😋😋

Veggie Potato Noodle soup made for dinner last night. My take on chicken noodle soup.

I agree. I was having the same problem. Delicious!

It’s a mixture of two recipes, plus what I had in the fridge.

Here are the two I mixed together. I added potatoes, eggplant, yellow squash, corn, carrots, peppers, noodles, and chard.

I never posted these sparkly photos of my heart crystal and the gorgeous lamp that The Romano Duo gave me for Christmas, taken at the end of December.

Guess I was saving it for a celebratory Thomas post. Thomas entered a game creation contest, winning first prize! I’m having a great time supporting and watching Thomas spread his wings and soar with his heart passion. I’m incredibly excited for Thomas’s future! 🎉❤️🎉

In the car today we were listening to Thomas’s music. Van Morrison’s Brown Eyed Girl came on. I commented I didn’t know he listened to Van Morrison. He said it reminds him of me, and he has a whole playlist of songs that reminds him of me, for when we don’t live together anymore. It’s full of songs that I’ve listened to throughout the years.

That’s the most thoughtful, beautiful thing anyone has said to me in a very long time. Thomas is just downright amazing.

Thomas said, “Oh, I forgot to tell you something else I did this year. One of the 1st graders told me it wasn’t important that he had graduated from kindergarten and was now in the 1st grade. I told him that it was important, cause now he knows all kinds of things he didn’t know before. Pretty darn grateful for HEAT this morning! Awoke to a frozen heater with it 10˚ outside!! All is well, it is thawed now and I’m beginning to feel my toes again! I was grateful to be INSIDE a house where it was at least 55˚!! Thank you Ted for fixing it!

Off to drive around and look at Christmas lights.

But, first we had another extra Team TLC movie night … “Beyond Tomorrow”

I love how this one begins, yet not so much after that. And has some good scenes. “No one is a stranger on Christmas Eve” and “Sometimes you have to travel to the darkness alone to get to the light.”

Lillian says, “Romantic, Christmasy, good, emotional, funny, awesome, and amazing.”

Thomas says, “Seasonal and I really like it.”
