Made these for myself thinking Thomas and Lillian wouldn’t want them. Should have made more!

Baked russet potato medallions with olive oil, pink Himalayan salt, black pepper, and ground ginger. Yum!!!!

I have an electric oven and baked them at 425. I started checking them after 15 minutes and every 5 minutes after that, rotating the pan each time. The first time I made them it only took 20 minutes. Next time it took about 30. Must have sliced them thicker as I just eyeball the slicing.

Mmmmmmmm …. Baked Rosemary Fries with pink Himalayan salt and black pepper, baked sweet potato, steamed broccoli alongside a cucumber salad of English cucumbers, sweet onion, dill pickle, and black olives drizzled with a fig balsamic vinegar. That was so good!!!

The Romano Duo and Thank You Letters and Super Surprise

December 21 2016:

It’s been six months since I’ve been a night without Thomas in the house. He’s only around the corner, yet I miss his presence!

The Romano Duo arrived yesterday and we went to the lodge today so they could use the gift wrap station. Thomas is spending the night with them tonight. Lillian’s turn tomorrow night!!

More getting caught up ….. For our November gratitude project we wrote letters of gratitude to our future selves, to one another to be mailed in the future, and a letter thanking someone to be delivered in person in the present moment.

I had done it all except the letter thanking someone. I wrote two!! Delivered Lillian’s last night. What a wonderful feeling! xoxo

So incredibly delicious!! I’m not the neatest when it comes to scooping the avocado from the skin. Ha!

Baked French fry salad …. I’ll take that!

Baked russet fries smothered in romaine lettuce, English cucumber, beets, sweet onion, garlic, raw sunflower seeds, salsa, aged balsamic vinegar, pink Himalayan salt, black pepper, sprinkle of Gouda and rosemary asiago, and drizzle of aged balsamic. Yum!!

Want to know something that’s really yummy?

Cinnamon-baked pears with toasted pecans!! Slice in half, drizzle with maple syrup, top with chopped pecans, sprinkle cinnamon, and bake at 350 for 30 to 40 minutes. Yum!!!

This one turned out beautiful!!!

Baked sweet potato loaded with sautéed sweet onions and garlic, and steamed red cabbage. Topped with a honey, lemon, ginger sauce and fresh cilantro.

The red cabbage is simply gorgeous. This picture does not do it justice. Looked like I was eating indigo colored flower petals. So yum!!!!! xoxo 🍠 🍯 🍋 🌺

Made my salad into a meal tonight. One of the best salads I’ve ever had!

Sautéed onion, garlic, and potato salad with beets, cashews, raw pecans (from a Mississippi pecan tree – courtesy of The Romano Duo), raw sunflower seeds, sulfur-free dried apricots, sautéed broccoli, chopped pickle, olives, English cucumber, sprinkle of prairie sunset cheese topped with a drizzle of aged balsamic vinegar. Potato mixture sautéed in coconut oil, Himalayan pink salt, black pepper, paprika, chili powder, and ginger.

Yum!!!!

December 16 2016:

Yum, Yum dinner last night!! Mixed mine with romaine lettuce, pickles, beets, English cucumbers, and aged balsamic. Thomas had his sans the salad.

Sautéed sweet onions, garlic, raw pecans, raw pistachios, and raw sunflower seeds in coconut oil with Himalayan pink salt, black pepper, and ginger. Mixing in gluten free Tinkada pasta and sprinkled with Prairie cheese.

And then there was this ….

Vegetarian chili infused with fresh sage ….. With sautéed sweet onions and garlic, big pinch of unsweetened cocoa, dash of aged balsamic vinegar, Himalayan pink salt, black pepper, chili powder, paprika, and ground ginger. Needed quick so used 2 cans of Trader Joe’s organic vegetarian chili and 2 cans of fire roasted and diced tomatoes.

And …. it is soooooo good!! xoxo

We had a party, cake, and gifts for Lillian’s birthday in September; yet, I had not made her card. I also finally made Thomas’ 11th birthday poster for his November birthday.

Mushroom Soup and Office on Wheels and Chili

December 5 2016:

Mushroom, onion, and garlic soup …. beginning to end. So simple and so delicious!
Candy cane Joe-Joe for dessert. Yum!!!! 🍥

When I cook I don’t use recipes. However when I bake I must have one! HA! xoxoxo

For this batch (they are different every single time):

I sauteed:
one medium sweet onion, (chopped in various sizes of small to medium)
2 packages of mushrooms, and (I bought whole and sliced them)
3 cloves of garlic (chopped into small pieces)
in a bit of butter (from grass fed cows) and coconut oil and splashes of water as needed

(All ingredients are organic whenever possible)

Save the garlic for near the end so it doesn’t burn. When sauteed to my preference I added spring water and Himalayan salt (lots since I’m not using a broth – it’s cheaper with water .. HA).

It’s best if it’s made the day before consumption as the flavors get stronger and yummier!!
